This hamburger potato soup can be prepared on the stove or in a crock pot. It’s a recipe my family loves and the spinach and cheese make this dish easy. Do this on a cold day or do it anytime with some of my southern cornbread hocecakes for a warm comfort meal. This soup is very versatile as you can add whatever you have on hand and make it your own. Green beans, okra pods, and celery could also be added to this great soup. It holds up well for several days and the recipe could actually be cut in half or doubled. I haven’t tried to freeze this soup but see no reason why it couldn’t be frozen.
Required ingredients for the hamburger potato soup:
Spring onion or 1 medium onion
Chopped or sliced carrots
Dried parsley flakes
Grated hot cheddar cheese
Corn starch (optional, only for thickening soups)

Hamburger potato soup
This hamburger potato soup is a wonderful comfort food! Great to enjoy with family and friends.
Servings: 8th Servings
- 1 lb Minced meat
- 1 Cup chopped green onion or 1 medium onion
- 2 teaspoon minced garlic
- 1 Cup chopped or sliced carrots
- 1/2 Cup frozen corn
- 1 Cup chopped fresh spinach
- 2 14.5 ounce cans of beef broth
- 3 to 4 medium potatoes peeled and cut
- 1/2 Cup water
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 teaspoon dried basil
- 3 teaspoon dried parsley flakes
- 1/2 Cup grated hot cheddar cheese
- 1 Cup milk
- 2 teaspoon Cornstarch optional, only for thickening soups
Fry the hamburger, onions and chopped garlic in a pan on the stove. Take out, drain and place in a soup pot or crock pot. Add the remaining ingredients to the stock pot or crock pot and, if you are cooking on the stove, cook until the potatoes and carrots are tender.
Cook in a crock pot for 6 hours on low or 4 hours on high. If you want the soup to be thicker, beat the cornstarch into the milk before adding it to the saucepan. Garnish with grated cheddar cheese.
