This Italian zucchini pasta casserole is quickly becoming a family favorite. It’s a wonderful way to enjoy zucchini, and it’s absolutely delicious. The combination of sweet Italian sausage with zucchini and Italian mixed cheese is definitely a winner! I can make this casserole into a meal.
Ingredients required for the Italian zucchini pasta bake:
Italian sweet sausage
Italian mix of grated cheese
I really think adding the tomato soup takes this casserole to the next level. It had such a sweet taste and then you add all the spices and that’s just so good. We all agreed the Italian sausage was really good in it, I think you could do it with ground beef or ground turkey, but the sausage was really good!
You could also use light yellow pumpkin in this dish. Just add it with the other vegetables.

Italian zucchini pasta casserole
A delicious way to enjoy zucchini!
Servings: 6th Servings
- 1 lb of Italian sweet sausage
- 2 cups of uncooked pasta
- 3 cups of zucchini quartered
- 1 10.75 ounce Can of tomato soup
- 1/2 Cup chopped green pepper
- 1/2 Cup chopped white onion
- 1 teaspoon of garlic powder
- 1/2 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of dried parsley
- 2 cups Italian mix grated cheese divided
Preheat the oven to 350 degrees. Cook the pasta according to the instructions and set aside. Brown Italian sausage, green pepper and onion in the pan.
Add the zucchini, spices and tomato soup. Simmer for about 3-4 minutes until the zucchini is soft.
In a 2 liter casserole dish, combine the pasta and meat mixture and stir in a cup of cheese. Once the top mixture has been combined with the remaining cup of cheese.
Bake in the preheated oven for 20 minutes.
