Cabbage Fiesta Soup - The Southern Lady CooksThis cabbage fiesta soup is a great comfort food and delicious soup. This soup is wonderful with the bread in the photo. (See link below for bread recipe) or make some cornbread muffins because they taste great too. We like this soup all the time and I make it for my family a lot. This soup keeps well chilled and is just as good when warmed up on the stove or in the microwave for several days.

Ingredients required for the cabbage fiesta soup:

Ground beef

Chopped garlic

Cabbage

onion

Diced tomatoes

Tomatoes with green chillies

water

Cheddar cheese soup

Kidney beans

Frozen Cut Corn (can use a can, drained)

Green pepper

Black pepper

Salt to taste

This soup is also ideal for any meeting. You can easily double the recipe and serve it to a lot of people. Easy to throw together and it has great taste!

You could easily make many variations of this soup! Do it with ground turkey or ground chicken, add any condiments you like like cumin, chili powder, and smoked paprika powder. All soups are super versatile and we like to try new things.

Cabbage Tip: Green and savoy cabbage are best for cooked recipes. Red cabbage is best raw, and napa cabbage is best raw or fried. Bok Choi is well sauteed.

This Crock Pot Cabbage Fiesta Soup is super easy to make and delicious on a cold day!

  • 1 lb Minced meat cooked and drained
  • 1 teaspoon minced garlic
  • 1/2 to 3/4 Head cabbage chopped
  • 1 small onion cut into rings
  • 1 14.5 ounce can of diced tomatoes
  • 1 10 ounce can of tomatoes with green chilies
  • 1 Cup water
  • 1 10 3/4 ounce can of cheddar cheese soup (do not thin)
  • 1 15 ounce can of kidney beans, drained
  • 1 Cup frozen cut corn can use a can, drained
  • 1 small green pepper chopped
  • 1 teaspoon black pepper
  • Salt to taste
