Ingredients for the sausage breakfast casserole:
Frozen hash browns, regular or southern style
Sausage or ham (could also use bacon or smoked sausage or any meat you like.
Salt and pepper to taste
Garlic powder, optional
Grated cheddar cheese
Breakfast casseroles are great for any vacation gathering as they feed some people. We love this one with sausage, but you can honestly use any meat you want. Hash Brown Sausage Breakfast Casserole
This casserole is wonderful to make when you have family or friends over! Super easy and always a hit. Would be great for brunch too.
Servings: 8th Servings
- 2 Pound. frozen hash browns normal or southern style
- 1 Onion, chopped
- 1 green pepper chopped
- 2 Pound. Sausage or ham cooked (could also use bacon or smoked sausage or other meat)
- 10 Eggs, beaten
- Salt and pepper to taste
- 1/2 teaspoon Garlic powder Optional
- 1 1/2 cups grated cheddar cheese
- Oil for cooking hash browns
Heat oil, add hash browns, onions and bell peppers. Cook until the potatoes begin to brown. Spray 9 x 13 baking dish with cooking spray. Spread the potato mixture in the pan, top with boiled sausage or ham.
Pour the beaten eggs over everything and season with salt, pepper and garlic. Stir gently to coat all of the ingredients with eggs. Sprinkle with cheese. Can be refrigerated overnight and then baked.
Bake without a lid at 375 degrees for 35 to 40 minutes. Makes 8 servings.
You can also do half of this recipe. You can use any type of meat you like.
