Ingredients required for sweet potato quickbread:

All-purpose flour

baking powder

salt

cinammon

nutmeg

Ground carnations

ginger

White sugar

Brown sugar

Eggs

Apple sauce

milk

oil

Sweet potatoes, boiled and mashed

Nuts (I used walnuts, could use pecans)

Raisins

  • 1 1/2 cups All-purpose flour
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinammon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon Ground carnations
  • 1/2 teaspoon ginger
  • 1/2 Cup White sugar
  • 1/2 Cup Brown sugar
  • 2 Eggs
  • 1/2 Cup Apple sauce
  • 2 tablespoon milk
  • 1/4 Cup oil I used canola
  • 1 Cup Sweet potatoes cooked and mashed
  • 1 Cup nuts I used walnuts, could use pecans
  • 1 Cup Raisins
  • Boil a large sweet potato in boiling water, then place in cold water to cool, peel and puree. (You can use 1 cup of canned sweet potato puree). In a large bowl, mix the mashed sweet potatoes, oil, eggs, milk, brown sugar, white sugar, and applesauce with a spoon.

  • Add flour, baking powder, spices, salt and keep mixing. Stir in nuts and walnuts and mix until all ingredients are wet. Put in a greased or sprayed 9 x 5 x 3 bread pan.

  • Bake in the preheated oven at 350 degrees for 45 minutes. Let cool for 15 minutes before removing from the pan.

Always check your bread for doneness as ovens vary. Opening and closing the oven during the cooking process can also mean that it takes longer to cook.
